Penn Diners Hungry for ‘Just Salad’

Casual restaurant offering healthy wraps, bowls, and more to open location in University City

Just Salad, a fast casual restaurant offering seasonal salads, wraps, grain bowls, and smoothies, will open a new location at the University of Pennsylvania in early 2018, announced Penn’s Division of Facilities & Real Estate Services. Just Salad currently operates more than 30 locations worldwide, including New York City and Chicago. The new University City location will be Just Salad’s second in Philadelphia, in addition to the 1729 Chestnut Street store.

A lease has been signed for 3728 Spruce Street, a 1,600 sq. ft. space on a popular retail block near the University’s iconic Quad College House.  Renovations to the space are ongoing — including a comfortable seating area composed of 23 chairs with café tables and a bar counter, a pickup station, and a tea station.

“We’re so excited to bring the world’s largest restaurant reusable program to Penn,” said Just Salad CEO and Founder Nick Kenner. “Our motto is ‘healthy for everyone’ which is why we set prices that work for students, parents, top executives, and everyone in between.  To be an everyday solution to health, we have 10 items under $10. And despite our name, we have the best avocado toast in town, delicious smoothies, high protein wraps, soups, and more.”

Founded in 2006, Just Salad creates nutritionally balanced recipes using organic and locally sourced items.  The NYC-based chain is best known for launching the world’s largest restaurant reusable program; customers can purchase a $1 reusable bowl at any Just Salad location and will receive free toppings with every use. This eco-friendly initiative helps save over 75,000 pounds of plastic every year.

“Penn’s overall retail master planning guides the latest additions to this portfolio as we bring a vibrant mix of shopping, dining, and services to the campus and refresh with new popular concepts,” said Ed Datz, Penn’s Executive Director of Real Estate.  “In the case of Just Salad, we recognize how this restaurant supports our local community’s healthy eating and wellness interests, along with sustainability goals of waste reduction and energy conservation.”
